Meet the chef

Chef Dominic Gurciullo was 15 years old when he started his culinary career in the back of the house as a dishwasher and pizza boy. Omaha native, he has honed his skills in various kitchens in the region. V. Mertz was the first restaurant to provide him with the platform to showcase his dishes, where he developed his unique style. Chef Dave Smyrk, currently at Circo in downtown Omaha, was a mentor who played a pivotal role in shaping his skillset at Dante in Legacy Plaza.


Driven by a passion for sustainability and a desire to understand the food supply chain, Chef Gurciullo regularly visits local partners to learn about their agricultural practices, enhancing his understanding of the ingredients he uses in his menu. He believes that food is a window into people's cultures and fell in love with cooking various styles of cuisine for this reason.
